It's a balancing act...

I have been struggling lately to find the balance in every day life. I have so many things that I want to accomplish and I feel like it is a complete trade off. I can either spend time with my beautiful boys and do all of the fun things with them that I would like to do, or I can get my housework done, my work done, and all of the other projects that consume my brain.

Unfortunately the creative side of me is always wanting to learn how to make something new or have a project I am working on. Because of that, sometimes I put the project before spending time with the boys and it is a daily struggle for me to find balance. And then after all of that is done, where do you find time to spend with your spouse, work on your calling at church, go to the gym to stay healthy, keep up with the blog, read your scriptures, work on food storage, plant a garden... the list could go on forever. And it is about to get worse because Peanut is going to be in school in September. Then all of the school activities start to add to the mix. How do you all find time to do all that you do?

I know that I just need to keep in mind the saying "Good, Better, Best" but I still struggle to decide what is best every day. That is my goal for the year is to find the balance.

Peanut's Artwork

I am so proud of Peanut. This is his first identifiable art work. Up until now it was just scribbles and random lines. He is the best artist I have ever seen, and I am not biased at all!!! ;)

Inauguration Day

I have to say that when Barack Obama was elected to be the next President of the United States, I was not excited. I also have to admit that I really didn't even want to watch the whole hooplah today. However, somthing came over me this morning. Maybe it was a heart softening you could say. But I decided that although I am not particularly pleased with who was elected, I am an American and I am proud that we live in a country where we can voice our own opinion. I was happy to see that our country is now in a place where we can elect an African American President. I did watch the ceremony as I was running on the treadmill at the gym, and I have to admit that I am glad I did. Someday I will be able to tell my grandchildren that I watched on television as the first African American and 44th President of the United States was officially sworn into office. What a cool thing!

Boy, Did I Learn a Lesson

I have been debating about blogging about this since it happened because I was a little embarrassed to admit that it was my fault. But I finally came to the conclusion that if this taught me a great lesson, it was blog-worthy.

So yesterday after church my brother had come over to watch "the game" (in case you didn't know because you have been on another planet, the Cardinals won the NFC and are going to the SUPER BOWL!). MCP and D-dawg (as my bro is affectionately known) had been up to the mountains all weekend having a boys weekend. I totally didn't mind them going at the time that they asked because I thought I could handle things on my own for a few days. I did really good with the boys all weekend until Sunday came. Getting myself and the two boys ready for church at 8:30 am was next to impossible. So to make a long story short, by the time MCP and D-dawg got home, I had had it with the boys. I just needed a break... so I sent them outside to play while we enjoyed watching the game.

Now, I normally do not allow my kids to play outside on Sunday, but like I said, I was up to my eyeballs in kiddo's! I kid-you-not when I say that not 2 minutes later, Peanut comes running in the house with a blood curdling scream and there is literally blood running down the side of his head and down his shirt! Peanut had thrown dirt in J-Bear's face and he didn't like it so he found one of those hand claw rakes and hit Peanut in the head with it. It gave Peanut 2 small puncture wounds on the top of his head. Luckily they were small enough that we were able to stop the bleeding quite quickly. But what a scary moment for us.

I have now learned that no matter how crazy the boys make me, we will always keep the Sabbath Day Holy and not play in the backyard! I sure wish that it hadn't taken one of the boys getting hurt to teach me that lesson.

Healty Food Recipe

A friend of mine tagged me to post a healthy recipe to give her some ideas for her family. Our family for the most part eats pretty healthy. We try not to eat super fatty foods, our problem is portion control... but that is a subject for another day. I have found that if I just substitute fat free or low fat items for the regular thing, that most of our foods become a little bit healthier to eat.

Our staple foods at our house are spaghetti (with whole wheat noodles) and chili because they have lots of tomatoes in them which my family loves. We also have grown accustomed to eating more beans which I find to be a healthier alternative dinner to meat every night. I have a true "meat-and-potatoes" man at my house. He thinks that we have to have meat for dinner every night. So I am grateful we have learned to eat more beans. And they are really easy to pressure can in mason jars so you always have cooked beans on hand in a pinch!

So on to my healthy recipe. This is a recipe that I am actually making for dinner tonight and I really like it!

Cole Slaw Chili

Makes 12 cups
1 WW Point per cup

1 lb ground beef or turkey (we use turkey because we like the flavor better)
1 onion
2 cans diced tomatoes with green chile's
2 cans diced tomatoes with garlic
1 can diced tomatoes
1 can kidney beans undrained
1 can pinto beans undrained
1 can black beans undrained
1 1lb bag cole slaw mix
To taste: chili powder, cumin, salt and pepper

Brown beef or turkey. Dice onion and add to browned meat. Add tomatoes, beans and spices. Stir in cole slaw and simmer until ready to serve.

Even for those of you who don't like cabbage (like me) you will still love it. You can't even taste the cabbage and it just adds more fiber to the mix. I have also added quinoia if I had some left over in the fridge. Hope you enjoy it.

Peanut is growing up...

I had what I like to call a "mommy moment" today. Today I went to the local Elementary School and picked up Peanut's kindergarten registration packet. I am so excited. I think I am more excited for him that he will get to socialize with other kids on a daily basis (besides the brother) and all of the activities that are going to stimulate his mind. I can tell sometimes how bored he is with the daily grind of home life and I am just so excited for him. Not to mention the fact that he will be in school and there will be WAY less sibling fighting in my house! YAY for peace and quiet!

But as I was driving home from the school, I realized that my first born is growing up. A part of my heart got all mushy and I thought about the day he was born and it seemed like just yesterday. You never quite realize how much they are growing up until a milestone like this happens in their lives. What a grown up little boy he is turning out to be. I am so proud of him!
